Ingredients:
Carrots grated :- 1 cup ( pressed measurement)
Walnuts chopped roughly :- 3/4 cups
Granulated sugar :- 1 1/2 cups
Ripe Banana mashed :- 1 no
Plain flour :- 1 3/4 cups
Baking soda :- 1 1/2 tsp
salt : - 1/ 4 tsp
Cinnamon powder:- 1/2 tsp
Nutmeg powder:- 1/2 tsp
Eggs :- 2
Butter milk or milk at room temp: to which juice of half a lemon is added :- 1/3 cup
Oil:- 1/2 cup
Vanilla essence:- 1 1/2 tsp

Method
Mix all the ingredients in a large bowl until combined well.. No need to beat till light coloured or anything..The batter will be semi thick..Pour the batter into a loaf tin lined with nonstick baking paper or wax paper..Bake in a preheated oven at 180 degrees for about 1 hour and 15 - 20 mnts.. Cool and cut into slices as we do with a loaf of bread.
